sweet apple + herbs de provence galette

It was rather sweet as I was baking this, J could clearly see how much I was enjoying it. He asked me if I ever had a dream to own a bakery. I responded quickly, with YES! of course. Can you even imagine how darling I would make it and the smells and sounds of people enjoying scrumptious, mouth watering delicacies. THEN- I remembered, I am by no means a pasty chef and owning bakery would mean I would need to be awake far too early in the morning and that my friends, I don't do well so for now, I think it is best if I stick to baking at home and sharing it all with you.

This Galette is so good. It has just enough pastry, light and flaky at that and this sweet and savoury juxtaposition that makes the flavour quite ravishing. It is most certainly best enjoyed with a hot cup of tea and cold vanilla ice cream. 

Here is the recipe, I hope you enjoy.

Pastry

1 cup plus 2 Tbsps flour

¼ tsp salt

1 Tbsp sugar

½ cup butter, cut into pieces

½ tsp vanilla

About 2 Tbsps ice-cold water

Filling

4 Tbsp brown sugar, more to taste

1 Tbsp flour

½ tsp cinnamon

About 6 apples, peeled, cored and sliced

1 Tbsp butter 

Sprinkle herbs de provence spice on top

 

Cook at 375 for approximately 25 -30 minutes
